This morning we had sessions from 8-12 again. The sun peeked out for a bit and we warmed ourselves outside during our refreshment break. At 12:30 we headed to the Ritz Carlton Culinary Center where we had cooking lessons with Chef Carlos Garcia!
We started our class with chopping and dicing vegetables for Shrimp Ceviche.
We added fresh lime juice to the shrimp and left it to marinate while we continued on with our entree.
We used a mortar and pestle to crush ingredients for our Tikin-xic marinade for red snapper.
While our fish marinaded, we started on dessert: churros with chocolate sauce. Guess who got to make the chocolate sauce??
Gary got to stir fry the Yucatan Squash side dish, and then we got to enjoy the fruit of our labours!

We had a great time with fellow conference participants, and it was great to be able to learn from Chef Carlos!
After our lesson, we walked to a nearby mall and did a bit more shopping while avoiding another downpour outside. Tonight we have another delightful meal at the Club Grill at 8:00 pm. Until then, I delight in listening to the sounds of a live saxophonist! 🙂
